How to make an Italian coffee

Io ho fatto alcuni cambiamenti, prendendo spunto sia dalle risposte date ad Elvira nel forum, sia da quello che ho trovato al mercato.
Ingredienti per 6-8 persone:
3 tazze di riso nero e riso greggio
1 tazza di riso carnaroli
80 gr rucola
1 lime, scorza e succo
1 limone, scorza e succo
olio q.b.
sale e pepe
pizzico di peperoncino
Per l'insalata di mare:
500 gr di gamberoni
500 gr cozze
6 green lips mussels (per decorare)
prezzemolo
1 spicchio di aglio
prezzemolo
sale, pepe
succo di limone
I've got this recipe from Elvira, a virtual friend that I've met on a Italian website I visit almost every day, called "Amici in cucina" (Friends in the kitchen). The recipe is very simple to make, but the result is quite impressive!Ingredients for 6-8 servings:
3 cups brown and black rice
Seafood salad
Cook the brown and black rice for 20 minutes; then stir in the white rice and cook for other 15 minutes. Drain and cool down the rice under cold water.

Pancakes
Now that you have your instant mix ready, it's time to make some serious pancakes! I have already tried mine, adding different kind of fruits: the classic blueberries, strawberries, peaches and almond (so long my favorite!), banana and walnut. Or, you know, you can have plain pancake smothered in maple syrup! It's just up to your mood in the mornig! So, gert up and start to cook!!!!1 cup thick yogurt
2 tablespoons melted butter
1 cups "Instant" Pancake Mix,
butter as needed for greasing the pan
fresh fruit , if desired
Whisk together the egg with the melted butter and the yogurt.

1 1/2 teaspoons baking soda
3 teaspoons baking powder
1 tablespoon kosher salt
2 tablespoons sugar
Combine all of the ingredients in a lidded container. Shake to mix. Use the mix within 3 months.

Ratatouille... the movie!!!
The best way to spend a Snday afternoon is with your lovely husband at the theather watching a Disney movie. Especially if this movie is Ratatouille!
This is the story of a rat named Remy who lives in a upmarket Parisian restaurant run by an eccentric chef. I won't say anything else, because I don't want to spoil it for you. All I can say is if you do not watch it, you will be missing out on a very very very special movie!
Fajita seasoning
1 cucchiaio maizena
2 cucchiaini polvere di chili o peperoncino
1 cucchiaino di sale
1 cucchiaino di paprika
1 cucchiaino di zucchero
3/4 di cucchiaino di dado di pollo
1/2 cucchiaino di cipolla disidratata in polvere
1/4 cucchaino di aglio disidratato in polvere
1/4 cucchiaino di pepe di cayenne
1/4 cucchiaino di cumino in polvere
Mescolate tutti gli ingredienti in una ciotola e conservateli in un piccolo contenitore a chiusura ermetica.

1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon crushed chicken bouillon cubes
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
Combine all ingredients in a small bowl.
Use as needed in recipes calling for fajita seasoning.
Yield: 10 tablespoons
Key Lime Creme Brulee

I don't know why there is so much fuss around the creme brulee, especially if you order it at a restaurant. It looks like you need a Michelangelo to make it! For sure required a long cooking time in the oven, but not this recipe! That's why I love it.
Ingredients for 6:
6 key lime zested
10 tablespoon turbinado sugar
6 yolks
pinch of salt
1/2 teaspoon lemon extract

I'm Italian. It's not my say how to cook a brisket, especially to a Texan. But, you know, I like to try and experiment all kind of recipes and since I love bbq... what better than brisket!The only problem, when Saturday I decided to bbq, the weather wasn't cooperating! So, instead of bbq, here my oven-bag brisket, moist and succulent. I've learn this method from a nice Southern lady, so it shouldn't be so bad!!!!
Ingredients for 10:
Rub the meat with the spices and the salt. Put it in the bag with the fat part on top; add the chopped vegeetables and the beer. Seal the bag; make some cut on the top and put it in a large baking pan. Roast it in the oven for 6-7 hours (or until fork tender) at 225 F.

What is brisket?
Brisket is a beef cut taken from the breast section beneath the first five ribs, behind the foreshank. Fresh brisket is an inexpensive boneless cut that requires long, slow cooking to break down the collagen in the connective muscle tissues achieve tenderness. The long piece is cut in half for marketing. You'll find it sold as a flat cut or a point cut. The flat cut is leaner, but the point cut has more flavor due to a bit of extra fat (called the deckel). However, most of the tenderness from this normally tough

La ciabatta
Ingredient for 4 loaves:
I SCREAM for ICE CREAM!!!!
Dopo aver steso la pasta frolla e ritagliato la formina, ho impresso la parte del cono con una piccola grattuggia, in modo da conferire quelle screpolature tipiche del cono gelato. Poi ho infornato a 180 C finche' sono diventati leggermente piu' scuri. Li ho fatti raffreddare e poi li ho decorati con una glassa di zucchero profumata alla fragola.
In my refrigerator I had some lavender and lemon cookie dough and I was thinking to use it for some dessert, but which one? So, I remembered that week ago I bought a new cookie cutter, and I still didn't use it. Perfect! Now I knew what to do. Here the result: an ice-cream cookie!After I rolled the dough, I cut it and with a small grater I marked the cone to resemble a real ice cream cone. Then I baked the cookies at 350 F until golden brown.
I let them cool down; then I decorated them with a strawberry sugar glaze: I've mixed few drops of concentrated strawberry syrup with water and powdered sugar, until I got a nice texture.

Della serie... non sanno piu' cosa inventarsi!!!

Non so perche' ma mi da' l'impressione che parlino di un film di fantascianeza! Comunque ...
Pero' chissa' magari , sebbene non fashionables, veramente funzionano! Io quando indossavo gli occhiali, piangevo lo stesso. E a proposito di fashion, non ti piacciono neri, che ne dici di quelli bianchi o ..rosa ?!?Fast food? No thanks!

I have to admit it: I like sometime to have junk food or fast food for lunch! But, if I can avoid, I'll try to make something similar at home, using fresher ingredients, especially if I don't want to cook just for myself!PANINI WITH FETA CHEESE, SUNDRIED TOMATOES AND PARSLEY OMELETTE

1/2 tablespoon fresh parsley, chopped
1 slice of feta cheese
pepper
3 sundried tomatoes
2 slices ciabatta bread
Beat the egg; heat a small saute' pan with a little bit of olive oil and pour in the beaten egg. Drizzle the parsley, black pepper (if you like) and the sliced feta cheese on top. Let cook evenly. Remove from the pan; fold it in half and put it on one slice od ciabatta bread. Arrange the tomatoes on top; cover with the other slice of bread and grill it.

6-minute almond chocolate cake
Are you in hurry? Are you just feeling sort of lazy? This is the right cake for you: in less than 15 minutes, you will make a cake from scratch, baking included!!!! Don't you believe me? Try it! You'll get a dense, rich chocolate cake, very similar to the Caprese Cake form The Capri's island in Italy. You can serve it plain or filled with a nice cremy filling.4 tablespoons all-purpose flour
4 tablespoons cocoa powder
1/2 cup almond meal
1/2 cup sugar
5 ounces bittersweet chocolate
1/2 cup plus 2 tablespoons pure olive oil
3 eggs
1 egg yolk
1/8 teaspoon salt
2 teaspoons orange extract
Syrup:
1/4 cup rum liquor
1 tablespoons orange extract
Filling:
Sift flour and cocoa powder into a bowl; set aside. In another bowl, combine almond meal, coconut flour and sugar; set that mixture aside also.
Place the chopped chocolate in a large microwaveable bowl with the olive oil. Heat in the microwave oven, stirring every 10 seconds with a rubber spatula. Be careful not to overheat; chocolate should be only lukewarm. Vigorously whisk in the eggs and egg yolk. Add salt, orange extract; combine well. Stir in the almond-sugar mixture, then the flour-cocoa mixture; combine well.
Lightly coat an 8- or 8 1/2-inch silicone cake pan or other microwave-proof pan with cooking spray if necessary. Pour cake batter into the pan and cook in microwave oven on high for 6 minutes. Microwave temperatures vary from model to model, so to be safe, check the cake after 5 minutes by gently pressing a finger to the center. If it bounces back, the cake is done. If not, continue cooking in 10-second increments until done. Allow cake to cool before carefully unmolding onto a serving tray.
To finish: slice the cake in half; drizzle with the syrup and fill with part of the cream filling. Put the half cake on top, spread the rest of the filling on the cake e, if you like, cover the border with chocolate sprinkles.

Pesche al vino
1 pesca gialla ben soda
1 bicchiere di vino rosso
Pelare e tagliare la pesca a spicchi, meterli in un bicchiere e ricoprire di vino. Aspettare una mezz'oretta prima di degustare.
It could look like a bad imitation of a sangria, but it really means a lot to me. It reminds me of when I was a child in my hometown in Italy, and my father used to prepare this for lunch. The smell of the peaches covered in wine was amazing. I still remember it like it was today, as I remembr I anxious I was to end the meal just to taste them!
Ingredients for 1 person:
1 yellow peach, well firm
1 glass of good red wine, to taste
Peel and slice the peach; put in a glass and cover with wine. Let rest 30 minutes before serving.
Melanzane ripiene di riso
8 melanzane piccole
100 gr di mozzarella, a dadini
15-20 pomodorini
1 cucchiaio capperi
2 cucchiai olive nere
origano a piacere1
1 spicchio di aglio
olio di oliva, q.b.
sale
parmigiano grattuggiato
basilico fresco
Tagliare le melanzane a meta' per il lungo, svuotarle dei semi e della maggior parte della polpa, spolverarle di sale e metterle in uno scolapasta con un peso sopra per fargli perdere tutto l'amaro.
Nel frattempo preparate il ripieno: fate soffriggere l'aglio in un po' di olio, coi capperi e le olive tritate. Aggiungetevi i pomodorini tagliati a quarti e insaporite con sale e origano. Non fate asciugare troppo i pomodori; lasciateli un po' "acquosi" in modo da poter condire il riso.
Quando il sughetto e' pronto, condite il riso, aggiungetevi la mozzarella e tenete da parte.
Sciacquate le melanzane e strizzatele bene. Farcitele col ripieno di riso.
Accendete il forno a 200 C.
In una padella - che possa andare anche in forno - mettete un po' di olio di oliva e fatelo riscaldare sul fuoco alto. Quando l'olio e' caldo, mettetevi le barchette di melanzane e fate friggere la base (cosi' saranno piu' croccanti) per pochi minuti; poi togliete dal fuoco, cospargete le melanzane di parmigiano grattugiato e mettete la padella nel forno, proseguendo la cottura per 15-20 minuti.
Rice stuffed eggplant
8 small eggplants, halved lenghtwise
4 oz mozzarella cheese, diced
15-20 cherry tomatoes
1 tablespoon capers
2 tablespoon black olives, pitted
oregano to taste
1 garlic clove
olive oil
7 oz pilaf or boiled white rice
salt
grated Parmesan cheese, to taste
fresh basil to taste
Preheat oven to 400 degrees F. Scoop out the flesh of the eggplants, sprinkle salt on top and let release some water.
In the meantime, saute' the garlic clove in 2 tablespoon of olive oil, with the capers and the chopped olives. Add the tomatoes, quartered, and a good pinch of oregano. Season with salt (and pepper).
When the sauce is ready, remove from the stove and dress the rice. Let it cool.
Wash the eggplant and squeeze them well.
Mix in the rice the mozzarella cheese and fresh basil and stuff the eggplants.
Heat few tablespoon of olive oil in a large, deep skillet - that goes into the oven - over medium high heat. Saute' the stauffed egglplantfor few minute, until the bottom get crispy, sprinkle top with Parmesan cheese and bake in preheated oven for 15-20 minutes, or until eggplants are tender.

16 cucchiai di burro sciolto
1 tazza di farina
2 tazze di semolino
1/4 cucchiaino di sale
1/4 cucchiaino di lievito
1/4 tazza di zucchero
1 cucchiaio di acqua di fiori di arancio
7 cucchiai di acqua
zucchero a velo per spolverarli
Ripieno di Noci:
1 1/2 tazza di noci
2 cucchiai di acqua di fiori di arancio
1/4 tazza di zucchero
1/4 cucchiaio di cannella
1 cucchiaino di miele
Tritare insieme tutti gl ingredienti, finche' risultano ben amalgamati.

16 tablespoons butter melted
1 cup flour all purpose
2 cups semolina
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 cup granulated sugar
1 tablespoon orange flower water
7 tablespoons water
confectioners sugar to dust
Walnut Filling
1 1/2 cups finely chopped walnuts
2 Tablespoons orange flower water
1/4 cup sugar
1/4 teaspoon ground cinnamon
1 tablespoon honey
Mix the ingredients for the filling well together and keep aside.
